​​Primary disability: Left middle cerebral artery stroke resulting in global aphasia and right-sided hemiplegia.

 

Estimated requirements: (Estimated on 17/08/2022)

  • Energy: 10209 KJ or 2440 kcal/day (Using Schofield Equation; IF- 1.4, AF- 1.2)

  • Protein: 50 – 62 g/day (0.8 – 1.0 g/kg BW/day)

  • Fluid: 1860-2170 mL/day (30-35 mL/ kg BW/ day)

 

Nutrition Goals:

  • Improve overall nutritional intake to prevent unintentional weight loss and maintain a healthy weight for his height

  • Recommend eating for pleasure and to taste preferences to improve the experience with eating and maintain quality of life

  • Improve his appetite and food intake by fortifying meals and snacks with high energy and protein where possible

  • Ensure adequate fibre and hydration to promote good bowel health

  • Monitor anthropometry by using a wheelchair scale

 

Nutrition Recommendations:

  • Recommend consuming small, frequent meals to assist with low appetite and small food intake

    • Fortify the foods to increase energy and protein intake (e.g., adding butter/margarine, oil, sweet and sour cream, honey, full-cream milk, white sauce/gravies, cream cheese, mayonnaise, ice cream, avocado, milk powder, oral nutrition supplements)

    • Have at least one Ensure Plus a day 

    • Have high energy mid-meals (e.g., yoghurt/custard with tinned fruit, mousse, rice pudding, soybean milk)

  • Prioritise protein components of meals to optimise muscle stores.

  • Have adequate fibre throughout the day to help with bowel movements

    • Crustless wholemeal bread and cereal

    • Well-cooked/soft and cut up fruits (e.g., berries, apple, banana, orange, melon, papaya, grapes, kiwi) and vegetables with skin (e.g., broccoli, spinach, kale, eggplant, green beans, zucchini, pumpkin, carrot, potato, mushrooms)

    • Well-cooked legumes (e.g., hummus, lentils, chickpeas, etc.)

  • Have adequate fluids throughout the day to help with bowel movements. Commence Bowel chart. 

    • Provide 100mL of water flush every two hours from  6am to 10 pm. Total of 900ml per day.

Breakfast

Choose ONE from the following:

  • Store-brought Korean porridge 

    • Add 1-2 scoops of Ensure Powder Neutral to the porridge

  • Dajuk (Korean Chicken Porridge)

    • Add 1-2 scoops of Ensure Powder Neutral to the porridge (if he does not eat enough)

  • 1-2x wholemeal bread (crust removed) with ONE from below

    • 1-2 eggs and ½ avocado

    • Meat and vegetable omelette and cheese

    • Tuna and mayo or egg and mayo

Morning Tea AND Afternoon Tea

Offer ONE from the following:

  • Ensure Plus supplement drink

  • Korean soybean milk with 1-2 biscuits or a handful of unsalted nuts/seeds or dried fruits

  • Activa Yoghurt (or try Chobani, YoPro, Jalna, Vitasoy) with 1-2 scoops of Ensure Powder
